IP Recipes I Love

Instant Pot Egg Roll Bowls
– https://www.idonthavetimeforthat.com/instant-pot-egg-roll-bowls/  – I made these as an experiment and they are now on the top of my list. In fact I browned up 1 1/2 lbs of pork and have it in the freezer so that I can make these on a whim.

Pressure-Cooker Chicken, Black Bean and Rice Burrito Bowls
– https://www.copymethat.com/r/G24Ryke/pressure-cooker-chicken-black-bean-and-r/   I make mine with Chicken breasts (frozen) another one for top of my list.  When I made this in my small IP I quickly ran out of space – so I only used 1/2 cans of corn and beans.

Chicken and Dumplings – I’ve never made dumplings but my hubby grew up with them, this was the first recipe that I made and he asks for it about once a week – he switches between this and the Wild Rice Soup. https://marginmakingmom.com/pressure-cooker-chicken-and-dumplings/ – not exactly what I do but pretty close, the recipe I use came in my booklet with my little one. This one is pretty close.

Chicken Wild Rice Soup –  There are 200 recipes for this, you sort of have to find what you like and don’t like about them.  Because we have so many dietary issues here, I go for the most simple here are a couple that I have found, but I always have to modify them, but these are a good start:

  • http://littlespicejar.com/instant-pot-chicken-wild-rice-soup/ – really, really close to how I make mine. I do use frozen chicken so I cut it up into 1″ pieces before cooking.
  • https://glutenfreepressurecooker.com/pressure-cooker-chicken-and-wild-rice-soup/ – again, really close

This is the rice blend that I have used for years.

IP Accessories / Necessities

With every new gadget you will always have ACCESSORIES!  Well the Instant Pot is not different in this aspect.

Before I give you my list of necessities here are a couple things to keep in mind before you buy something to use with your IP:

  • Is it oven safe? Your IP reaches high temperatures. If what you are buying is not rated for oven use, I wouldn’t put it in your IP.
  • Will it fit?  Guess what, they are not all the same size – just cuz your brand may say 6qt doesn’t mean it is exactly the same diameter as another brand. I am speaking from experience here – when you buy your pot measure the pot that you cook in. I have purchased pans to use in my IP that says they fit the 6qt and they do not. If your accessory is too big and sits on the top of the pot, your cover will not close and you will not come to pressure.
  • I google everything before I buy it – for prices, recommendations, bad reviews.  I look at them all.
  • Get on FB and join the 100 groups that are now out there. I joined 2 right away and I had to unfollow them because of the amount of traffic they have – they filled up my feeds. but because I am still a “Friend” I can go there a search for recipes.

There are lots of “accessories” available now, and I usually jump off the boat and get them all. But not this time. And where I have bought a couple of things that I probably won’t ever use, I have a couple of things that I have used the first day they came. So here’s my list of Necessities:

  • Silicone Egg Bite molds – we don’t eat eggs but I know someone that got these and her kids love them. They will make 2 or 3 different recipes in them and freeze them and her kids have after school snacks – and for athletes an egg snack is on the top of their list for snacks.

  •  Steamer – the IP’s come with a small trivet (if not get one of those right away) and you can put your veggies or what ever you are steaming right on the trivet, but I found it much easier to control the veggies when taking them out when they were on the steamer.

  • Pot holders – these are not necessarily for the IP’s but the style of them make so much sense for the IP’s. I have little grasping ability in my hands so anything that helps me grab things is a god send to me. These are great!!! You can use regular pot holders but these clean off so much easier.
  • Grasping Handle – now this is not a necessity for most people, but once I used it I was sold and bought them for 4 other people.  This type of pot holder locks on and make it so easy to life the pot out. I have even used these on other pans and they are very universal.
  • Seal / Gasket – they come color coded so you can have one for spicy dishes and one for non-spicy dishes. This is a must if you have someone in your live that is sensitive to some foods. Also, these seals/gaskets will stretch which causes the IP not to seal and throws off cooking times. So keep these in mind if you start having problems with coming to pressure – your seal may be stretched out.

Instant Pot Craze (IP)

Instant Pot (IP) is it the latest craze or will it stick around for awhile?

I wonder what they said when the crock pot came on the market, so many moons ago?

I purchased a small one for my hubby for christmas (on a whim) – I saw someone post about it on facebook and we are all about gadgets so I said why not.

If only I knew then what I know now about these things I would have purchased a little different.

They come in 3 common sizes: 3qt (mini), 6qt and 8 qt. I have even seen a 10qt advertised. Mine, however, turns out it is a 2 qt, which is not a bad thing except I have to cut down all recipes that are in the FB groups.

A couple things you should know:

  • The infusion of flavors in the recipes you make is undeniably undefinable. I have made some things in this gadget that I have always made in crock pots and I will never again make them in a crock pot. I now make Chicken Wild Rice soup once a week (ok, it is winter, but still) and we have been making this recipe for years the same way and until I made it in the IP, we had never had wild rice that was this tender.
  • Meat will be so tender you will want to check to make sure you used real meat. I just made a full chicken (5lbs) in my newer larger one (yes, I went and purchased a 6qt using Walmart rebate dollars) and it was moist, tender and fell off the bone. In fact, taking the chicken out of the pot the legs and wings fell off.
    • So here is what I got out of my 5lb chicken:
      • Dinner for 2 (I made mashed potatoes & steamed carrots in the mini pot
      • 10 cups of chicken stock when I cooked down (yes in the IP) the carcass of the chicken after taking off all the meat
      • took 4 cups of chicken stock and made chicken wild rice soup – got 2 lunches and 3 good sized servings of soup in freezer bags
      • enough chicken left over for 2 sandwiches tomorrow for lunch
  • https://i5.walmartimages.com/asr/c43894e4-3fd3-4aea-aa68-f765b70d998e_2.ba5823a2032b0cf509a6b15646f9998a.jpeg?odnWidth=undefined&odnHeight=undefined&odnBg=ffffffVegetables – we are not a big vegetable family, but I have made mashed potatoes in the IP (the only place we make them now) and it’s amazing what they are like. I have always boiled potatoes for mashed potatoes and the first time I made them in the IP my hubby was astonished at how they tasted – they were not water logged.   I made a twist on this recipe last week: instant pot egg roll bowls and it was out of this world. I could not find the cabbage mix, but I did find a “Super Blend” that I used in it’s place and I was amazed how green the steamed veggies were when I dished it up.
  • You will NOT use less dishes – most of the time. In fact, sometimes it seems I used more than usual. And you will probably buy more “specialty” dishes to use with it.
  • Cooking times – when a recipe says it will cook in 10 minutes (rice for example) – there is a little more to it:
    • Your pot may take 10 minutes to come to pressure – this is not counted in the cook time
    • after you have cooked it for the 10 minutes you programmed it to, there is the depressure time –
NPR (Natural Pressure Release) – let it sit and depressurize on it’s own – usually another 10 minutes
QPR (Quick Pressure Release) – you press the button to rapidly release pressure and stop the cooking process – usually for vegetables. This can be dangerous because you are pressing open the valve but also takes a couple of minutes to release
    • If your recipe calls to saute the meat or vegetables (google this because I don’t do this now and the flavors are way different now) that time is not counted in the cook time of the recipe
  • The key to the IP is cooking with liquid that is pressurized – so liquid in the recipes is very important.
  • Meat does not get color to it – for the most part. Most of the recipes I’ve seen say “throw the meat under the broiler for 10 minutes on each side”  This 10 minutes per side is not part of your cooking time either.
  • I was worried at first, because the most you see done in these things is eggs and we don’t eat eggs here. But I can say that if I come home and decide I want chicken wild rice soup for dinner because the hubby was working out in the snow/weather all day, I can have it made and on the table in an hour.

When it comes right down to it, I am so happy that I got, not just one of these, but now two of these “gadgets” for my hubby for Christmas.
