IP Recipes I Love

Instant Pot Egg Roll Bowls
–  – I made these as an experiment and they are now on the top of my list. In fact I browned up 1 1/2 lbs of pork and have it in the freezer so that I can make these on a whim.

Pressure-Cooker Chicken, Black Bean and Rice Burrito Bowls
–   I make mine with Chicken breasts (frozen) another one for top of my list.  When I made this in my small IP I quickly ran out of space – so I only used 1/2 cans of corn and beans.

Chicken and Dumplings – I’ve never made dumplings but my hubby grew up with them, this was the first recipe that I made and he asks for it about once a week – he switches between this and the Wild Rice Soup. – not exactly what I do but pretty close, the recipe I use came in my booklet with my little one. This one is pretty close.

Chicken Wild Rice Soup –  There are 200 recipes for this, you sort of have to find what you like and don’t like about them.  Because we have so many dietary issues here, I go for the most simple here are a couple that I have found, but I always have to modify them, but these are a good start:

  • – really, really close to how I make mine. I do use frozen chicken so I cut it up into 1″ pieces before cooking.
  • – again, really close

This is the rice blend that I have used for years.
